Tarragon

Tarragon is probably best known as the star ingredient in tarragon vinegar. Bring 2 cups white wine vinegar to the boil. Place ½ cup tarragon leaves in a jar. Pour vinegar over. Leave for 1-2 weeks. Strain into a bottle. We grow French tarragon in a large container and move it into a sheltered spot over winter so it doesn’t get too much moisture.
