Ginger

Each winter when my ginger plant is dormant, I dig up the whole clump, and replant a couple of pieces. I crystallise or freeze the rest. Barbara Smith, Auckland Ginger is deciduous and loses its leaves between May and October, but it can be harvested at any time. Once the plant is established, carefully dig down and cut off what you need, as you need it. Leave the rest to keep growing.
